ABOUT OUR HONEY

DARK

Our dark honey is a unifloral Mesquite honey.  That means that during our recent severe drought in central Texas the bees could find few other sources of nectar than mesquite trees.  Bees prefer many other sources of nectar so having a pure mesquite honey is extremely rare and an indication of how severe the drought is in Texas.  This unique honey has a strong flavor and a dry aftertaste - just like Texas!

AMBER
Our most popular honey is amber in color.  It is sweeter than the dark honey with floral sources that include cactus and wild plants and flowers in the area.  It still has our uniquie mesquite 'Big Texas' flavor.   The 2021 crop is darker that usual but very sweet - it tastes amazing.  
NEW CROPS

We have been planting some good bee friendly crops to help our bees have local nectar sources as well as add some variety to our honey.  And hopefully having some local nectar sources will help the bees make more honey!
